Spaghetti Pie!

Here's a favorite recipe we served our company this week and they loved it. It's a dish my Italian husband's dad made when he was growing up and now he makes it.

Spaghetti Pie

1 1/2 pounds spaghetti, cook and cool.
Beat two eggs well, add 1 teaspoon Italian Seasoning (more or less, depending if you like it, it's strong.)
Toss the cooled spaghetti with the egg mixture (it must be cooled or it will make scrambled eggs!)

Layer spaghetti in a lasagna dish (spray with olive oil), then a layer of sliced pepperoni, then a layer of sliced American cheese, then a layer of spaghetti, repeating the pepperoni and cheese, ending with spaghetti.

Bake at 350 degrees for 45 minutes.
