Let them eat cake!

I have been wanting to make this strawberry coconut cake since we had it back in June at Lulu's Tea Room in Knoxville, TN. Since today is a day of two meetings I decided to make it so we would have help eating it! It is a three-layer cake and makes huge slices!

I baked the three layers last night, then frosted it this morning. I only have square cake pans, but don't have a square platter to put the square cake on! Can you believe with all the dishes I have, I don't have the right size for this cake!

The cake tastes wonderful, and my Faith Sharing Group agreed it is! Tonight my Creative Memories group will be here and will have their share!

The frosting was a little thin, not sure if I did something wrong, but it's still good, just not as pretty!

It doesn't look very pretty here because the strawberries show in the frosting.

Here's the recipe, try it, it isn't hard to make at all. Let me know if you make it!

Lulu's Strawberry Coconut Cake Recipe

Cake:
1 1/2 boxes of white cake mix
5 eggs
2 cups water
3/4 cup oil
1/2 box of strawberry jello (3 oz. box)
1/2 cup of chopped strawberries
Icing:
16 oz sour cream
1 1/2 cup granulated sugar
1/2 box of strawberry jello (3 oz. box)
7 oz bag of sweetened flaked coconut
1/2 cup of chopped strawberries
1 (8 oz) carton of cool whip thawed

Directions

Preheat oven to 350. Mix all ingredients for cake with an electric mixer. Pour into 3 (8 or 9 inch) round baking pans that have been sprayed with cooking spray. Place in preheated oven and bake for 22 minutes. Let cake cool completely before icing.
Mix all ingredients for the icing, excluding the cool whip. Place one layer of cake on a platter and cover the top with 1/3 of the coconut mixture. Add the second layer and cover that layer with another 1/3 of the mixture. Take the remaining 1/3 mixture and add the 8 oz carton of cool whip. Add the 3rd layer and cover the entire cake with your cool whip mixture. Garnish with strawberries.

My mouth is drooling. I want that slice you offered in the worst way. I can't think of a thing in my kitchen to substitute with so I will now be in misery the rest of the afternoon ;-) I think you did a beautiful job, Katherine. I applaud anyone who will tackle icing THREE layers!

That is the prettiest cake I've ever seen, chickee! All pink and gooey looking on that gorgeous.....squeeeeal.....plate! Coconut is my favorite cake. I've thought of making a "pina colada" cake with pineapple juice and pineapple and coconut. Just don't need it right now while trying to lose some of this weight, but I'll do it someday. Your cake looks absolutely delicious and divine though, Sugar!!!!

Hello darling, thanks for the invite, sorry I couldn’t make it yesterday, I suffered all day from a dreaded migraine, doing much better today thank heavens. Darling, the cake looks absolutely and positively delicious, and of course pink is my favorite color and strawberry my berry of choice. I will try it and will let you know.
